rich divine & fateful chocolate torte

Ok, for most of you, this will seem random, but for those of you who have had it, love it, and email me for the recipe at least every couple weeks….i know you’re glad to have access to it. For the rest of you – you should make it asap. You’ll basically fall over. Promise.

RIDIC recipe i don’t wanna lose: no seriously.

5 tbsp UNSALTED butter
200g 70%cocoa good-quality chocolate bars
4oz digestive biscuits. opt for whatever has the lowest sodium, we used ones with 180mg/2 cookies and the crust was a bit too salty. (you could use graham crackers if you want, i guess, but i haven’t tried it)
1 tbsp GOOD cocoa powder
2 tbsp brandy or any liquor
250g (9oz) mascapone cheese (made it with fat free cream cheese last time and it was still ridiculous good…and not SO sinful)
2 medium eggs
3.5 tbsp really really dark brown sugar (ideally muscavado)

In a pan, melt 3.5 tbsp butter (you’ll have some leftover butter) and 50g of the chocolate. Melt over super-low heat and add crushed cookies. Press into a springform pan or just a 9″ cake pan. Put in the freezer.

Put remaining butter (1.5tbsp), chocolate, cocoa, and brandy in a metal bowl on top of a pot of simmering water (double boiler-style) and stir occassionally. Set to the side.

Beat mascarpone cheese to soften it and stir it into the chocolate mixture.

But eggs and sugar into a second metal bowl and place over the simmering saucepan and use an electric whisk to beat the mixture until light, thick, and very pale (it takes a LOOOONG time – like at least 10 minutes. Spoon the chocolate mixture into the egg mixture over the stove and mix by hand until smooth and creamy. Pour over the crust and allow to chill about an hour.

slice & serve. make sure you taste it over a soft surface for when you fall over. seriously.
