yeast rolls

started on thanksgiving dinner today. i think i’m simply going to save all my room for the yeast rolls i just whipped up. i like bread way too much. oh dear.

1pckg yeast dissolved in 1/2c warm water
2/3c sugar
1c hot mashed potatoes
2/3c butter
1tsp salt
2 eggs
5-6c flour

Mix it all up, add the flour last. Separate into golf-ball sized balls and roll in melted butter. Freeze or refrigerate if you’re not quite ready to use them. Before baking, cover and let rise in a warm area for at least 4 hours – bake at 375 for 10min.
