chocolate dump

a chocolate cake for those of you who, like me, don’t like chocolate cake because it’s just never dense or rich enough to satisfy my chocolate craving. generally, i put chocolate cake into the “not-worth-the-calories” category, but this chocolate cake? it’s just not so.

ella and i made a panda, so we used cream cheese frosting AND the fudge icing. definitely a fantastic mix.

Chocolate Dump Cake

2 oz unsweetened chocolate
1/2 c butter
2 c granulated sugar
1/2 c buttermilk
1 tsp vanilla
1 cup warm water
2 c flour
1 1/2 tsp baking soda
1/2 tsp salt
2 eggs

Melt chocolate and butter in double boiler.
In large bowl, combine sugar, buttermilk, vanilla -beat @ low speed till blended
Add chocolate/butter -beat @ low speed till blended
Add warm water -beat @ low speed till blended
In seperate bowl, sift together flour, soda, salt.
Add to chocolate mixture -beat @ low speed till blended
Add eggs and beat at high speed for 2 min (mixture will be thin)
Pour into greased & floured 9 x 13 pan.
Bake at 350 for 50-60 min or until toothpick in center comes out clean.

Fudge Frosting

2 oz unsweet chocolate
1/2 c butter
1/2 c brown sugar packed
1 lb confectioner’s sugar
1/3 c sour cream
2 tbsp agave
1 tsp vanilla
1/4 tsp salt
1 cup walnuts (optional)

Melt butter/chocolate in double boiler
Add sugars, sour cream, agave, vanilla, and salt and cook until dissolved (Mix will harden like fudge if overcooked)
Frost cake while frosting is still warm – it thickens quite a bit once cool.
